6 - Remove the Rotary Encoder from the Board

Ok, full disclosure - this is the "intermediate" part and is by far the most challenging step.  Your Yoto probably has this rotary JST connector glued down in the board.  Take your time and slowly wiggle that wire free.  Use caution to not damage the connector on the board.   Again, take your time!  In my case, I elected to cut wires near the connector, lay the rotary coder off to the side, and use a pair of pliers to slowly wiggle that wire free from the board.

Also, take note of the orientation of the wires and how our new JST connector matches (don't actually insert it yet). The red stripe wire will correspond to the yellow wire based on my testing.
